But Xiropotamos by Domain Tatsis is an amazing white wine made from Xinomavro with the method of Blanc de Noir. This means that skins are removed from the must before maturation so the do not color the final product . The two “rebel” Tatsis brothers, have avoided the commercial paths of cultivation and vinification. They use indigenous yeasts, extremely minimal interventions and bottling without filtration to produce a wine that is one of its own. Xiropotamos is a world class wine and it is no surprise you will find it in some of the best wine lists around the world.

[product_subtitle] This Goumenissa is really amazing. It is a blend of two great indigenous varieties, powerful Xinomavro and exotic Negoska. The Tatsis family story of fine winemaking starts as early as 1924, when the grandparents of the current owners settle in Goumenissa as refugees from Eastern Rumelia. The vineyards, located in Limpaskeri and Gerakona, are cultivated according to the principles of biodynamic agriculture and offer grapes of high quality from non-irrigated soils. Current owners Pericles and Stergios Tatsis insist on organic and environmentally friendly methods of cultivation with low yields, ranging from 300 to 700 kg per acre, limited interventions and fully natural methods of viticulture and vinification.
