This means that skins are removed from the must before maturation so the do not color the final product . The two “rebel” Tatsis brothers, have avoided the commercial paths of cultivation and vinification. They use indigenous yeasts, extremely minimal interventions and bottling without filtration to produce a wine that is one of its own.
