Dialogos White by Dyo Ipsi Estate is a blend of two varieties, Assyrtiko and Kidonitsa, which beautifully complement each other adding complexity and a larger spectrum of interesting dimensions. The vineyards are located in the area of Ilia, in 2 slopes of different heights with different types of soil which offer perfect sun exposure and drainage for top quality wines. .Assyrtiko brings in its passionate dynamic character while Kidonitsa brings in a fruity softer persona. Today Mathew Argyros is responsible for the famous winery, which was originally built 120 years ago by his great grandfather. After extraction the wine remains in stainless steel tanks and then for another 6 month is in stainless steel tanks with its fine lees.

Fermentation and maturation takes place in stainless steel tanks for 22 months an then the wine remains 2 months in oak and another 12 months in the bottle. To create Vinsanto, grapes are sundried for 10-14 days under the sun where they become dehydrated and provide their concentrated sugars. Then the juice ferments in stainless steel tanks and followed by maturation in big old French barrels for a number of years.
