[product_subtitle] Everyone agrees that Apostolos Thymiopoulos is a real artist when it comes to the art of serious wine making since all of the products he has launched so far have become great hits in Greece and abroad. This time he steps out of his Naoussa terroir to explore Rapsani with a blend which combines 3 important local varieties: Xinomavro (50%), Stavroto (15%) and Krassato (35%). They come from older vines which have not been irrigated and are cultivated with low yields. The must remains first in stainless stell tanks and then in oak barrels for 14 months. Xinomavro, the star variety of Greece’s north, has many different expressions. Rapsani tends to be more fruity with velvet tannins. Rapsani Terra Petra seems to round up the edges of explosive xinomavro into a chic and more delicate red wine that can be enjoyed anytime.

Vriniotis winery is located in Edipsos, a very promising terroir with vineyards of sandy-clay soil and limestone subsoil which is ideal for premium wines.  In terms of the vinification process, 40% of the must ferments with indigenous yeasts and then remains for 6 months in its fine lees for maturation. The final product offers full body, crispy acidity, an impressive nose with prevailing aromas of citrus fruit and flowers and perfect minerality that you do not expect to find out of Santorini.

Arlekinon Chora is a boutique winery located in the area of Thessaly, in central Greece, at the slopes of Mount Narthakio. Cultivation follows the organic principles and a low intervention philosophy from the vineyard to final vinification is crucial for the production of these very special wines. In Arlekinon Chora they choose to combine a variety like Assyrtiko with a very classic red one in order to come up a lighter more fruity version of the original red. This is why for maturation they use second or third use oak barrels in order to leave the fruit untouched. The final product is delicious. A late harvest and a low yield philosophy, which is also due to the hardening of the vines, offer a very concentrated superb final product. Half of the must remains in new French oak for 5 months while the rest for 10 months remains in its fine lees in order to balance complexity and freshness. Grapes are divided with some maturing in stainless steel and the rest in French oak barrels. Then the must remains for 2 months on its fine lees and the result is a beautiful balanced wine with complexity, full body and crispy acidity.
