Athina Tsoli is a winemaker that has travelled extensively and has participated in harvests and wine production in different parts of the world and some very famous wineries. To create a unique Assyrtiko, except her experience and expertise, she brings in grapes from 3 vineyards from the best parts of Santorini in order to uncover the true personality of this unique terroir. After the grapes have been carefully selected the must stays for 9 months in its fine lees and the result is a beautiful Santorini which stands out for its concentration and fruity essence.
