Yiannis Paraskevopoulos, owner of Gaia Wines is one of these very special people who not only has deep knowledge of what modern wine making stands for but is also responsible for many years for educating new wine makers, as a professor of the Institute of Oenology. The essence of Assyrtiko Wild Ferment is the use of indigenous yeasts that have the power to bring out the real personality of Assyrtiko. The grapes come from an 80 years old vineyard and the precious juice always ferments with its own yeasts. Gaia wines owns a second winery in Exo Gonia Santorini and is now a true player in the new era of Assyrtiko which is not just a local wine anymore but a famous international one, which is part of some of the best wine lists in the world.
