Aivalis winery is located in Nemea where the red variety of Agiorgitiko is present for thousands of years. After making miracles with Agiorgitiko Christos and his son Sotiris Aivalis decided to experiment with world famous Assyrtiko in order to create a totally new white wine with the signature of Aivalis Winery. Having studied in Burgundy Sotiris brings a new perspective into wine making which his father is proud of. Without irrigation or fertilization of the vineyards, which are placed in some of the best parts of Nemea, without any filtration of the final products and very limited interventions the  wines are amazingly delicious. Assyrtiko by Aivalis is a seriously complex Assyrtiko with a smoky oily character that makes it perfect for sophisticated food pairing.
