Santorini Laoudia – Canava Chryssos by Tselepos Winery is one of these wines about which word of mouth spreads so fast that it gets hard to get any bottles if you do not make a move on time. The single vineyard where the Assyrtiko grapes come from is located at the village of Pyrgos in Santorini and is cultivated in terraces called pezoules. Grapes are carefully hand picked when they are ripe and the must stays with its fine lees for 8 months in amphoras and for another 10 months in the bottle. The result is a divine wine with perfect complexity, an amazing full body with incredible concentration and a satisfying acidity which is as sharp as it gets.
